Crock Pot Kahlua Pig

I went to Hawaii with my mom years ago and fell in love with the luau food there!! Since then, Del and I have contemplated having a Hawaiian-style reception when we have our wedding. This recipe was to try out that idea and we have since decided we are DEFINITELY going Hawaiian!! This is another set-it and forget-it crock pot recipe. It is great served with any fragrant cauliflower rice!

4-6 lb. pork shoulder "butt" roast (this size will depend on how big your Crock Pot is)- adjust the other ingredients depending on size of your roast
2 tbsps. coarse grind kosher or sea salt
2 tbsps. liquid smoke flavoring

Score the roast with a knife on all sides (in other words, cut across roast one way and then make diagonal cuts- so it looks like a tick-tack-toe board on your roast) or just pierce roast all over with fork. Rub roast with course salt, place in crock pot and pour liquid smoke over top roast. Put the lid on and cook 8-9 hours on high (or on low about 16 hours). Drain all but 2 cups of liquid from crock pot. Using 2 forks, shred pork roast and mix with remaining liquid. Serve with cauliflower rice. That's it- a Hawaiian luau in your own kitchen!! Enjoy!

Olive oil cake with chocolate ganache

The olive oil in this cake makes it super moist, which is hard to achieve when working with coconut flour. Infused olive oils work wonderful in this cake; I have a blood orange infused olive oil that I will substitute into the recipe sometimes. The chocolate ganache is quick and easy, but tastes sublime! Enjoy! 1 cup olive oil 3/4 cup Coconut flour 3/4 cup erythritol 6 large eggs 2 tsp Baking powder 1 1/4 tsp Baking Soda 2 tsp vanilla extract 1/4 tsp Pink Salt INSTRUCTIONS Combine all dry ingredients in a bowl and set aside. Beat eggs to double the  original volume in another bowl. Add olive oil, and vanilla extract to eggs and combine. Slowly add the dry ingredients into the wet as you combine. One skillet Italian supreme

All your favorite Supreme pizza toppings in one skillet! After a long day at work, I know I can whip this up with minimal effort and time, but it's a comforting and filling meal. Servings: 6-8  (Enough for a tribe, depending on appetite!) 1- 16 oz.
