Coleslaw with Vinegar Dressing- not entirely keto, but still delicious

It's BBQ season! This coleslaw recipe if great when paired with pulled pork or brisket, but anything BBQ'd will fit the bill!


4-5 cups shredded cabbage (about 1 medium head) OR 1 package pre-shredded coleslaw cabbage mix
1 medium green pepper, thinly sliced
1 medium Granny Smith apple, skinned and grated
3 carrots, shredded
1/2 medium onion, either yellow or sweet white, grated
1/4 cup sugar substitute- I use Swerve
1/4 cup white vinegar
2 tbsp. canola oil
1/2 tsp. salt
1/2 tbsp. celery seed
1/2 tsp. ground mustard

Combine all vegetables and apple. Set aside. In a medium mixing bowl, whisk together sugar, vinegar, oil, and spices. Pour over vegetables and toss to coat. If creamy coleslaw is desired, stir in some mayonnaise, a little at a time, until creamy. Enjoy!

I can't believe it's low carb chocolate mousse

This recipe is not quick, but it is an indulgent dessert that will definitely have you asking yourself how could this possibly be keto? Ingredients:  4 large egg yolks  1/4 cup Swerve sugar substitute +another 2T. In the whipped cream  2 cups heavy cream  8 ounces (90%) or darker chocolate or Lilys chocolate chips (90% chocolate will have some sugar in it, Lily's chocolate chips are stevia sweetened) 1 teaspoon vanilla extract  Apx 1/4 teaspoon cream of tartar  1/2 teaspoon espresso powder  Directions  1. In a medium saucepan, whisk together egg yolks, 1/4 cup Swerve, and 3/4 cup heavy cream, vanilla and chocolate.
